Switching from batch to continuous brew. What size vessel do you recommend? Glass or ceramic? And how do you manage the SCOBY hotel?

Glass is better than ceramic — you can see the SCOBY. I use a 5-liter glass jar with a spigot.

Start with a 3-liter jar until you dial in your flavor. You'll waste less if a batch goes wrong.

SCOBY hotel: just keep a separate jar with some liquid and feed it sweet tea monthly. Simple.
