German-style sauerkraut fermented for 4 weeks. The juniper berries add an incredible piney note. Simple but perfect.

Juniper in sauerkraut is so good. Did you add it at the start or midway through?

At the start, layered in with the cabbage and salt. About 8-10 berries per head of cabbage.

Four weeks is the sweet spot. I've tried 2 weeks and 6 weeks — 4 has the best balance.
